Who knew you could bake oatmeal NOT in a dessert? A few weekends ago I was at Camp Stitchalot and we had a yummy baked oatmeal for brunch one morning. Now, I have eaten this at previous camps before and I liked it then too but for some reason, I was moved to try to find a recipe when I got home this time.
A quick Google search found me loads of baked oatmeal recipes but there were a lot of differences in them. And most had like a stick of butter in them…and as much as I love butter, I’m really trying to eat better. I tried a few, one was too dry, one was too bland so I changed up the recipe until I got it right. I used applesauce instead of butter to keep the calories down and it also helped with the dryness. For those of you counting, there are only 5 Weight Watchers points in each serving (makes 8). Hope you love it!
You could easily substitute the apples for blueberries or cranberries!
