Holiday Baking – Apple Cinnamon Baked Oatmeal Recipe

Who knew you could bake oatmeal NOT in a dessert?  A few weekends ago I was at Camp Stitchalot and we had a yummy baked oatmeal for brunch one morning.  Now, I have eaten this at previous camps before and I liked it then too but for some reason, I was moved to try to find a recipe when I got home this time.  

A quick Google search found me loads of baked oatmeal recipes but there were a lot of differences in them.  And most had like a stick of butter in them…and as much as I love butter, I’m really trying to eat better.  I tried a few, one was too dry, one was too bland so I changed up the recipe until I got it right.  I used applesauce instead of butter to keep the calories down and it also helped with the dryness.  For those of you counting, there are only 5 Weight Watchers points in each serving (makes 8).  Hope you love it!

Apple Cinnamon Baked Oatmeal

You could easily substitute the apples for blueberries or cranberries!  

Prep time: 10 Minutes

Cook time: 40 Minutes

Total time: 50 Minutes


  • 3 Cups Quick Cook Rolled Oats (I used Quaker Quick 1 minute)
  • 1/2 Cup (packed) Brown Sugar
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1/2 Cup Applesauce (I used chunky)
  • 2 Teaspoons Ground Cinnamon
  • 2 Eggs
  • 1 Cup Milk
  • 2 Teaspoons Vanilla Extract
  • 3/4 Cup Diced Granny Smith Apple (1 small)

Cooking Directions

  1. Preheat an oven to 300 degrees F (150 degrees C).  Butter a 9″ x 9″ glass pan and set aside.
  2. Mix all ingredients into a bowl.
  3. Bake in the preheated oven for 40 minutes until an inserted toothpick comes out clean and the edges are lightly brown!
